Get Ready. Set. Celebrate!
We know you would much rather be celebrating at an in-person convocation ceremony. We would prefer that too! Since we aren’t able to though, we have prepared some things to help you safely celebrate on November 2.

Laurier Purple Cupcakes Recipe
Ingredients:
1 box white cake mix
1 cup buttermilk
1/3 cup melted butter
4 large eggs
1 teaspoon cocoa powder
Purple food colouring
Set your oven for 350 degrees, or the temperature noted on your cake mix, and prep your cupcake tin with liners
In a mixing bowl, combine the first 3 ingredients and 4 eggs. Beat with an electric mixer for about 30 seconds, until the ingredients are moist.
Increase the speed to high and beat until thick, about 2 minutes longer.
Mix in your purple food colouring to achieve a light purple.
Add 1 tsp of cocoa and ensure it is incorporated.
Add a bit more purple, if you’d like.
Fill your cupcake liners to about 2/3 full and bake until a toothpick inserted in the centre comes out clean. This tends to be 20 – 25 minutes for jumbo cupcakes, 15-20 minutes for standard cupcakes, and 8 – 10 minutes for minis.
Remove your cupcakes from the pan and place on a wire rack to cool.
Celebratory Frosting
1 container of white frosting
½ teaspoon lemon flavouring
Yellow food colouring
Using an electric mixer, mix the three ingredients and slowly increase your food colouring until you achieve your desired colour.
